Abstract
  • This publication reports the results of a study designed to provide supermarket management with information useful for evaluating and controlling storewide sanitation costs. Labor, supply, equipment and service costs were developed and analyzed for four Oregon supermarkets (two chain store units and two owner-operator m1its). The study also provides regulatory agencies with an indication of the magnitude of sanitation costs incurred by super­markets complying with established sanitation regulations and standards such as those in effect in Oregon.
