Abstract
  • The oyster culture sector in France is facing since 2008 a crisis due to over-mortalities of spat, strongly related to the virus OsHV1-μvar. The consequence is a large decrease in total production, from 111,000 T in 2007 to 80,000 T in 2014. This communication is focusing the consequences on the domestic market. Traditionally, French oyster market is mainly supplied by domestic production, the level of foreign trade being relatively low. While the decrease in domestic production has created a gap in supplies, the imports of oysters have only slightly increased, but with no real compensation. There has been a contraction of the market volume, while an important increase in farm gate prices, and retail prices, has allowed to avoid a collapse of production sector. Nevertheless, this positive reaction of the market seems to have reached a limit, as retail prices showed a stagnation in 2013-2014 and a decrease in 2015, also linked with a low ability of oyster farmers to control collectively the farm-gate prices when marketed volumes vary. The structure of the offer, the respective weights of distribution channels, and the consumers' profiles, have been modified. This communication is bringing an analysis of the changes in market, mainly for at-home consumption, and discuss the relationships with the changes at production level and in the stakeholders' behaviour.
